Homesteading 102:
This 8-week hands-on course is designed to equip students with the knowledge and practical skills needed to successfully manage a productive homestead during the summer season. Participants will explore the planning, planting, and maintenance of summer crops, with an emphasis on maximizing yield and sustainability in warm-weather conditions.
Topics Covered:

Students will learn proper harvesting techniques to ensure peak quality and productivity, as well as a variety of food preservation methods such as canning, freezing, and drying to extend the usefulness of summer harvests.

In addition to crop production, the course will cover strategies for transitioning gardens into fall, including succession planting and soil preparation. Students will gain insight into selling surplus through farmers markets, including basic marketing, product presentation, and local regulations.

The class will also address the seasonal care of livestock, focusing on maintaining animal health and productivity during the heat of summer. Throughout the course, students will engage in hands-on garden work and participate in small-scale construction projects that support homestead infrastructure, such as raised beds, trellising, and simple shelters.

Farm to Table: Canning, Preserving, and Baking

This 8-week course teaches the essential skills to extend the life of fresh farm products through traditional food preservation methods and scratch-made baking. Students will learn how to safely can, freeze, dehydrate, and ferment seasonal produce, as well as bake wholesome, farm-fresh goods for home use or sale.
- Canning & Preserving: Water bath and pressure canning, pickling, jams and jellies, fermenting, and dehydrating.
- Baking from Scratch: Homemade breads, pastries, and baked goods using farm-fresh ingredients.
- Farm-to-Table Cooking: Creative ways to use preserved foods in everyday meals.
- Food Safety & Regulations: Proper storage, labeling, and legal considerations for selling homemade products.
